The BSc in Sports Studies is a 3 year full time level 7 degree course, designed to meet the needs of coaches and sports administrators. The course aims to develop, from evidence-based theory and practice, the students’ ability to coach athletes (individually and in teams), manage sports teams and individual athletes, and manage courses of work for sporting bodies. The course integrates Sport Science, Coaching Science and Sports Administration and Governance. Sports Studies is a relatively new academic discipline in Ireland and brings together the key disciplines which can support employments within the sport and health sector. Bachelor of Science (Honours) in Nutrition and Health Science
This BSc (Hons) in Nutrition and Health Science programme is a unique interfacial degree with an equal emphasis on both nutrition and health science. This programme provides an approach to nutrition that is based on the scientific and academic principles of biology, biochemistry, social and public health aspects of human nutrition, as well as encompassing emerging issues such as biotechnology, food sustainability and security. The primary aim of the programme is to develop expertise in nutrition and apply this knowledge and related skills to health science and public health. This synergistic approach to nutrition and health science provides students with a greater understanding of the integration of these elements and the vital role of nutrition in public health and health promotion initiatives. Core studies include nutrition, food science, nutrition throughout the lifecycle and in health and disease. These are complimented by the behavioural sciences, health policy, research methods, epidemiology and new developments in health in the areas of biotechnology and microbiology are included. In this programme, principles related to the primary healthcare service, strategies and methods for promotion and evaluation of health are also explored and evaluated. The programme is underpinned by a strong foundation in the core sciences supporting health science with nutrition and a rigorous scientific approach is central to the entire programme.

Bachelor of Science (Honours) Culinary Science
Would you like to learn how to create appetising food products and dishes through scientific understanding and the application of culinary skills? This course will prepare you for a career as a development chef or food product developer, as well as for other roles in the manufacturing, retail and related food industries. This course is a joint degree offered by the School of Culinary Arts and Food Technology and the School of Food Science and Environmental Health. Culinary science is a rapidly growing discipline. The food industry needs to satisfy the demands of consumers requiring value-added, high-quality, tasty food. The first two years of the course will provide you with practical skills in kitchens, food science and nutrition in our labs. The kitchen skills focus on professional cookery, whereas science focuses on food research and experimentation. Years 3 and 4 focus on the everyday needs of a dynamic concept/development chef. Overall, you’ll gain skills and knowledge in the sciences and culinary arts which will be applied during two specific work placements. You will engage in a food product development research project which will involve creating a product in an industrial kitchen and analysing its properties in a range of specialist laboratories.
